Ken DuBard hails from Cedar Creeks, SC, in Northern Richland County. He has lived in Columbia SC for most of his life. Ken started in the milling industry in 2006 and founded The Congaree Milling Company in late 2013. They specialize in stone-ground organic corn and oats, with an emphasis on quality. The Congaree Milling Company mills Hominy Grits, arguably a lost foodway. Ken feels that the Native American art of nixtamal has been sadly absent from the vocabulary of corn. He is hoping to spread the knowledge and the awareness of the debt owned to Native Americans in regards to the nutritious and delicious foodway of nixtamal.
